Fortune Cookies

Time: This has varied quite a lot. Plan for about 2 hours.

Serves: Makes 25+ cookies

Inspired by: Girls gatherings. On a few occasions it has been fun to make up some fortunes.

Cookie Ingredients:

  • 6 large egg whites
  • 1 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoon almond extract
  • 1/2 cup + 1 tablespoon vegetable oil
  • 1 1/2 cup all purpose flour
  • 4 1/2 teaspoons cornstarch
  • 3/4 teaspoon salt
  • 1 1/2 cup granulated sugar
  • 1/2 cup+ 1 tablespoon water

Preparation:

  • Create, print and cut out fortunes
  • Preheat oven to 300 degrees F
  • Get some thin gloves to wear to protect your fingers from burning when you fold the cookies
  • Get a small cup and a muffin tin to help shape and cool the cookies

Cookie Dough Preparation:

  • Grease 2 cookie sheets (even if they are nonstick)
  • In large bowl, lightly beat egg whites, vanilla extract, almond extract and vegetable oil until frothy (not stiff)
  • Sift or whisk flour, cornstarch, salt and sugar into separate bowl. Stir in the water until smooth.
  • Add the flour mixture to the egg mixture, beating gently until well blended and smooth.

Bake Cookies:

  • Place level tablespoon of batter onto cookie sheet and use a spoon to spread it out in a circle about 3 inches in diameter (or whatever size you choose) with at least an inch of space between them. I find it easiest to make only four cookies at a time.
  • Bake until the outer edge of each cookie (about 1/2 inch) is golden brown — if not brown enough they will dry too soft. Bake approximately 12 minutes.
  • Keep the tray in the oven while you remove one cookie at a time with spatula. Flip it over to the other side on a flat surface. Insert the message, close the cookie (fold over in half like a half circle) and then pull the edges downward over a small cup such as a coffee cup. Then place into a muffin tin to keep the shape while it dries. You must work quickly because they harden fast.
